The Green Sailor

Popeye the sailor man used to eat loads of spinach to make him strong.  So I can imagine if he made a voyage to the Caribbean this is the drink he would most certainly approve of.  Refreshing and yummy too despite the obscure shades of green.

Ingredients:

2 big handfuls of spinach, 50ml coconut water, 100ml tropical fruit juice, 1 chopped banana.

Method:

Blend all together.

Sunshine Breakfast

A sunshine breakfast is a breakfast which is supposed to help you start your day off with a smile and my juices will most certainly add to that boost.  Rather than the loaded sugar drinks at the supermarket my juices contain natural sugars and if you do need the juices sweeter you can choose how much sugar, syrup or honey to add.

Ingredients:

12 strawberries, 1 apricot (de stoned), 2 peaches (chopped and de stoned), 1 small tsp honey.

Method:

Blend well and drink up with a smile.

Strawberry Blast

Berry Blast

After a successful trip to the market picking up the most luscious strawberries I could find I started inventing recipes for them.  My smoothies have never failed me yet.  I am currently creating more wonderful combinations.  This time I mixed the strawberries with flaxseed, acai berries, a tbsp of honey and I even through in a few oats.  Smoothies are so delicious and great to help you with your fruit and vegetable intake.

Raspberry Banana Delight

Angel Delight

I saw a mother in the supermarket helping her child choose several different flavours of Angel Delight.  I completely forgot the stuff existed, when I was a little girl I used to look forward to eating it as a dessert.  Now I am not too sure my taste buds would be too pleased with the odd concoction.  Does anyone actually know whats in that stuff?  I decided by making my own delight, which is basically a thick smoothie.  I wanted to make it the same colour as the bright pink angel delight so I used raspberries.  I think my treat is a much better alternative, natural sugars and natural colouring.

Ingredients:

1 medium banana, 3 tbsps 0 % fat greek yoghurt, a handful of fresh raspberries.

Method:

Blend altogether till you reach desired consistency.

Saffy’s Top Tip

For a little extra sweetness add some more banana or even a little drizzle of honey.

Oven-Roast Broccoli with Chilli & Mint

The Perfect Sidekick

The main meal and side dish should be combined as if the main meal was a superhero and the side dish was a sidekick.  If the side dish is useless like a boring salad to just make the plate look pretty then this will not enhance the dish in any way and will be a waste of money and food.  If Robin was a pathetic and lazy person Batman would be left vulnerable.  So please make your side dishes interesting and tasty, even if it is well cooked rice.  A side dish needs purpose people! This is a fool-proof side and it has a nice kick to it.

This recipe was adapted from Lorraine Pascale’s ‘Home Cooking Made Easy’ (HaperCollins Publishers, 2011).

Ingredients:

A few broccoli heads, a drizzle of olive oil, 1 big red chilli (de seeded and chopped into small pieces), salt and black pepper, a bunch of fresh mint.

Method:

1. Preheat the oven to 180 degrees C.
2. Break the broccoli and scatter over the oven tray.
3. Drizzle on some olive oil.
4. Scatter on some chillies and season with a little salt and black pepper.
5. Roast for 16 – 20 minutes.
6. When broccoli is cooked take out of the oven, shred the mint leaves and sprinkle them over the vegetables.

Cashew and Coconut Tofu Stir Fry

TexturesMy favourite thing about this dish was the variety of textures.  The chewy moist tofu, crunchy carrots, soft green beans with the aroma of coconut milk really comforted me after a day of books, books and more books.  I also treated myself to some corn on the cob, it really reminded me of my old life in Barbados. Good times.  Sometimes healthy can be comforting.


This recipe was adapted from FitnessMagazine.comIngredients:

2 tsp Sesame Oil, 1 tbsp of grated or lazy Ginger, 1 minced Garlic Clove, 2 medium Carrots (chopped), 1/2 can of green beans, 8 button mushrooms (chopped), 4 Spring Onions (chopped), 1/2 can light Coconut Milk, 1 handful of chopped Cashew Nuts, serve with Brown Rice and Corn on the Cob.

Method:

1. Start cooking the rice.
2. Heat up the oil, ginger and garlic for a minute.
3. Add tofu and fry for 8 mintues, turn once or twice.
4. Stir in vegetables, coconut milk and cashews.
5. Cover with tin foil and cook for 8 minutes.
6. Cook the corn on the cob for 8 minutes.
7. Serve the stir fry with the rice and corn. Enjoy.

 

Saffy’s Top Tip

Use the rest of the coconut milk to make a curry or another stir fry.

Tofu Szechuan Stir Fry

New Chinese SauceI felt like being adventurous and I had a craving for tofu and kidney beans, so on my shopping trip I found some random ingredients that I thought would work in a stir fry.  I was browsing through the sauces and spotted one I had never seen before.  The Szechuan Chinese stir fry sauce,  I had no idea what is used for or how it smelt but I felt like taking a risk.  It payed off, my stir fry tasted great.  Full of flavour, cheap and easy.

Ingredients:

1/2 pack of Tofu, 1 small pack of Szechuan Stir Fry Sauce, 1 can of Kidney Beans, 1 small can of Sweetcorn, 1 small green Chilli and 1 small red Chilli (both chopped and deseeded), 1 small Courgette (chopped), a little Sunflower Oil for frying, 4 plain Olives or chilli green Olives (stoned) and Brown Rice to serve.

Method:

1. Heat a little oil in a wok.
2. Drain tofu, and when oil is hot fry for 3 minutes pressing down on it.
3.  Add kidney beans and  chillies.
4.  After roughly 3 minutes add the sweetcorn, chopped courgette, olives and sauce.
5. Fry until everything is cooked through.
6. Serve with brown rice.

Querky Quorn Bolognese

Querky?I named my dish Querky because I wanted a word that began with Q and it vaguely means indifferent, (kind works as an alternative to beef). And… I made the bolognese whilst watching ‘Star Trek’… Say Something!

This recipe was inspired by the ‘Asda Fit For Life’ recipe ideas.

Ingredients:

400g minced Quorn, 1 large Onion, 2 small Garlic cloves, 400g of peeled Plum Tomatoes blended (if you have chopped tomatoes you do not need to blend them), 2 tbsps Tomato Puree, a handful of Basil, 1 tbsp dried Rosemary, 3 -4 handfuls of spinach, 200g sliced Mushrooms, 2 small Carrots, 1ooml Vegetable Stock, Wholewheat Spaghetti, extra seasoning to taste, Oil for frying.

Method:

1. Heat a little oil in a large saucepan and add onions to fry for 2 minutes.
2. Add quorn and stir and cook until cooked through.
3. Add the tomatoes.
4. Put on another saucepan of boiling water and start the pasta cooking process.
5. Add the rest of the vegetables to the “quorn stew” apart from the herbs.
6. After 6 mins add the herbs and simmer for 15 – 20 minutes.
7. Season bolognese to taste and serve with drained cooked pasta.

Saffy’s Top Tip

This recipe is too easy for you not to try out different vegetables to see what works.  Add mroe vegetables and change some around.  You could even try yummy snake beans or spice it up with chilli and hot pepper sauce!

Broccoli and Bean Soup

Healthy LeftoversAs a student it is very important that I know how to use up the leftover food in my kitchen.  This way I can make healthy and cheap food during what student’s like to call “Empty Pocket Month”.  Soup is one of the best dishes to achieve this and you might even invent a new soup recipe.  I decided to use only a few ingredients as I wanted something light.

Ingredients:

1/4 of a medium Brocolli (cut into chunky bits), 1 Green Chilli (chopped), 1/4 of a Red Onion (chopped into small pieces), 2 gloves of crushed Garlic, 1 can of Mixed Bean salad, 1/4 Red Pepper, 1.2 litres Vegetable Stock.

Method:

This dish was inspired by ‘End – of Term Pasta & Bean Soup’ in Sam Stern’s Student Cookbook, (Walker Books)1. Heat oil in a pot and fry garlic and onion until they are soft.
2. Then add broccoli, beans, chilli and red pepper and stir for 4 minutes.
3. Add the stock and simmer for 10 minutes.
4. Add lemon juice and seasoning to taste.

Saffy’s Top Tips

  1. Add potatoes or pasta to make it more filling.
    2. You can grate cheese on the top if you feel you’re missing something.
    3. Eat with some thick toasted bread.

Lemon Pasta with Chicken, Courgette and Sunflower Seeds

Fresh and Filling
This recipe was super easy to make, most of my food does involve quite a bit of chopping because I love vegetables, but all of the preparation if worth it in the end.  To some people this dish may seem very simple, but the best thing is you can add as many vegetables as you like.   I added paremsan and all purpose seasoning to give it a little something something.

Ingredients:
2 tsps. Salt, Wholewheat Fusilli (add how much you want. I put enough for 2 days worth), 2 tsp Olive Oil, 1/2 Courgette, 5 Spring Onions, a handful of Sunflower Seeds (these were originall pine nuts), 1/2 Lemon, 1/2 Red Pepper, Chicken Breast, fresh Basil Leaves (this helps to make the dish extra tasty, don’t forget the basil), Parmesan to sprinkle on at the end.
Method:
1. Wash prepare and chop the chicken into bitesize chunks.
2. Use the olive oile to fry the chicken.
3. After chicken has been frying for about 5 minutes, start cooking the pasta. (Boil the water first).
4. When chicken is nearly done add some lemon juice, some lemon zest (not the white part of the lemon), courgette, red pepper, spring onion and spices and herbs to taste.
5. Then add sunflower seeds and a bit more lemon juice to your preferred taste.
6. Put the pasta and chicken together and top with parmesan.
