Warm Chicken Chickpea Salad

Always a Winner

I made this salad after receiving some unwanted news.  I did not want to be sad for too long because the only thing that  being sad achieves is making you sadder.  In my eyes its better to be sad and productive than to just be sad.  I realised that winners only become losers when they give up and that is something I never do.  My healthy salad is nutritious and filling, real good food to give you the energy to pick yourself back up and win.  Stop beating yourself and cook good food to have the energy to beat others. This recipe was inspired by Asda Magazine (London: Publicis Blueprint Ltd, August 2012).

(Serves 2)


Ingredients:

1 small pack of raw chicken fillets, 3 tsps paprika, 2 tsps low soy sauce, 1/4 chopped and sliced red onion, 1 beef tomato, 2 tbsps olive oil, 4 tsps balsamic vinegar, 4 spring onions, 1 tbsp chopped flat leaf parsley, 1 x 300g can chickpeas, 2 handfuls of kale, salt and pepper.

Method:

1. Wash and prepare the chicken fillets and chop into bitesize chunks.
2. Marinate with paprika and soy sauce.
3. Bake chicken with onion for 20 minutes.
4. Chop tomato and drizzle with 1 tbsp olive oil.
5. Add tomato to chicken and bake for another 15 minutes.
6. Drain chickpeas and simmer in a little water  for 5 minutes.
7. Drain chickpeas and put in a medium bowl.
8. In the bowl and vinegar, the kale, the spring onions, parsley and chicken, onion and tomatoes.
9. Mix everything together and season to taste.
