Cheese, Tomato & Jalapeno Quesadilla

Cheese on bread…with the trimmings

Most people should know that my number one saying is “Cheese on Bread!” Why?  Because it symbolises hard times and is usually my cheap go to snack.  When something startles me more I now say “cheese on bread with jalepenos” Why?  Because this is an even better snack and an even better saying! It is basically another version of a cheese sandwich but gooey with a nice kick.

This recipe was taken from Tacos Quesadillas & Burritos (Ryland Peters & Small, 2012).

Ingredients:

4 -5 ripe tomatoes, thinly sliced, 300g grated cheddar cheese, 80g cup jalepenos (chopped), 1 tbsp vegetable oil, guacamole to serve.

Method:

1. Pre heat the oven to 120 degrees C.
2. Put a quarter of the tomato slices on 4 of the tortillas.
3. Sprinkle each with a quarter of cheese and jalapenos.
4. Top each with another tortilla.
5. Heat the oil in a non stick frying pan and set over a medium heat.
6. When hot add a quesadilla, lower the heat and cook for 2 -3 minutes until golden one side and the cheese begins to melt.
7. Transfer the heatproof plate to keep warm in the preheated oven while cooking the rest.
8. Cut the quesadilla in wedges and serve with guacamole.
