Omelette Sandwich

For one of my modules I have to do an internship.  My work load is quite hectic and it is physically as well as mentally challenging.  I do not always have time to spend hours in the kitchen so it is important to prepare well and get all of the nutrients I need in quickly made but delicious snacks.  My omelette sandwich is a no brainer for the benefits it can provide after a long active few hours work.  It is tasty and can be eaten cold or hot.

This recipe was adapted from Silvana Franco’s The Ultimate Student Cookbook (Murdoch Books, 2007).

Omlette tin

Ingredients:

2 eggs, a dash of skimmed milk, a small handful of grated cheddar cheese, 4 cherry tomatoes (quartered), salt and pepper, water cress, mayonnaise, margarine, wholemeal bun.

Method:

1. Beat the eggs, milk, cheese and tomatoes together in a small bowl.
2. Season a little with the salt and pepper.
3. Fry the omelette until cooked all the way through flipping when the center is set and the bottom is slightly browned.
4. Half the bun and spread the middle with a little margarine.
5. Split the omelette and place into the bun.
5. Top with a little mayonnaise, cress and sandwich.
