Soft Puff Sugar Bakes

Sugar Sugar 

I was craving sugar so I decided to make stupidly quick doughnuts with no whole.  Just batches with sugar on the top.  I love my life.

Sweet Dough


1 tbsp yeast, 4 tbsps caster sugar, 150ml milk (warm), 1 egg, 225g plain flour, 1/4 tsp salt, 50g butter (melted), icing sugar, sunflower oil for frying.


1.  Mix the yeast with half a tsp of the sugar and two tbsps of warm milk.
2. Place this in a warm place and rest for 15 minutes until frothy.
3. Sift the flour and salt into a large bowl.
4. Stir in one tbsp of sugar.
5. Make a well in the flour and pour in the yeast mix.
6. Also in the well pour in the rest of the milk, melted butter and the egg.
7. Mix to make a dough and then knead until elastic and soft.
8. Leave for 45 minutes.
9. Heat some oil in a frying pan.  Not too much.  No more than 1cm until it is bubbling.
10. Drop a cube of bread in the pan if it turns brown after 30 seconds then the oil is ready.
11. Making small flattened dough balls as you go carefully place dough in the pan.
12. Fry on each side for 3 – 5 minutes.
13. Drain the dough on a kitchen towel on a plate.
14. When all the dough has been used leave to cool for 10 minutes.
15. Dust icing sugar over the top.
