Apricot and Nut Teabread

Nutty Vegan

When I first saw this recipe I thought that there were ingredients missing.  I assumed this loaf was going to be stodgy and overly sweet.  I was happily surprised after I tasted it.  It smelt as if it could be displayed in a cute bakery and the texture was like a thick bread.  The nuts and crystallized apricots added an element of drama because ingredients added a series of vibrant flavours.  This is perfect for vegans and could easily be redesigned for those with nut allergies, for example dried pineapple could be added to maintain the interesting flavours and contrast of textures.

This recipe was taken from The best of Sainsbury’s Vegetarian Cooking (Reed International Books Limited, 1992).

125g high fibre bran, 50g caster sugar, 120g dried apricot pieces, 300ml apple juice, 125g wholemeal flour, 2 tsps baking powder, mixed chopped nuts.


1. Place the bran, caster sugar, apricot and apple juice in a small bowl.
2. Leave these ingredients to soak for an hour.
3. Stir in the flour, baking powder and 100g of  mixed nuts.
4. Prepare a loaf tin.
5. Pour the mixture into the loaf tin.
6. Sprinkle the nuts over the top of the loaf.
