Dark Chocolate Brownies

Broken Eggs

Sometimes the best things come from accidents.  As the popular British slogan says “Keep Calm…” For once I did it, I kept calm and thought about what I could do about the 4 broken eggs which were cracked on the floor.  I gathered them quickly and used what I had in the cupboard to make brownies.

This recipe was adapted from Merry Berry’s Baking Bible (BBC Books, 2009).

Dark Choco Brownies


20ml vegetable oil, 375g caster sugar, 4 eggs, 75g cocoa powder, 100g self-raising flour, 100g plain chocolate.


1. Pre heat the oven to 180 degrees C.
2. Grease a square tray bake roasting tin and then line with baking parchment.
3. Measure all of the ingredients into a large bowl apart from the plain chocolate and beat until evenly blended.
4. Melt the chocolate and then fold into the brownie mixture.
5. Spoon the mixture into the tin and level the surface.
6. Bake in the oven for 40 minutes.
7. Leave the brownies to cool in the tin before cutting into squares.
8. Well try and do this before others start digging at it.
