Mac ‘n’ Cheese

Cheese Overload

If you are in need of a cheese overload then this is the perfect comfort food evening meal.  This macaroni cheese meal is pretty simple and quite a variation from the saucy American version or the Caribbean pie, but it does the trick.  Keeps you full and gets you happy before another low point or let down.

This recipe was adapted from Silvana Franco’s The Really Useful Ultimate Student Cookbook (Murdoch Books, 2007).

250g macaroni, 1 tbsp sunflower oil, 1 small onion (chopped), 1 garlic clove (peeled and chopped), 50g mixed vegetable sauce, 1 tsp mixed herbs, 1 can of tuna, 180g fiery mature cheddar (grated), 50g mozzarella.


1. Boil just below half a saucepan of water.
2. Put in the macaroni and stir occasionally and leave in the saucepan to cook.
3. In a small saucepan heat up the oil on a medium heat.
4. Put in the onion and the garlic and fry for 3 minutes.
5. Drain the macaroni.
6. Add the sauce, mixed herbs, tuna and cheddar.
7. Then add the drained macaroni.
8. Mix the ingredients together well and then pour into an oven proof dish.
9. Sprinkle the mozzarella over the top of the pasta and bake for 25 – 30 minutes at 18-0 degrees C until the cheese has melted and the top is crispy.
