Banana Cinnamon Muffins

Too Good

There were more over ripe bananas so I did what any great cook would do, mushed them up and turned them into something sweet and creative.  My muffins are well flavoured and I would say they that I definitely stepped it up a level in terms of making this particular bake.  I love banana and mixed spice together I think it is a fantastic combination.

This recipe was adapted from Levi Roots’ Reggae Reggae Cookbook (Collins, 2008).

Ingredients:

100g butter, 225g plain flour, 1 tsp bicarbonate of soda, 175g light brown sugar, 1 tsp lemon juice, 3 tbsps milk, 2 bananas, 2 eggs, 1 tsp vanilla essence, 2 tsps cinnamon, 1 tsp nutmeg.

Method:

1. Beat the butter and sugar together.
2. Gradually beat in the eggs.
3. Add the flour and bicarbonate of soda and stir.
4. Fold in the bananas and spices.
5. Mix in the lemon juice, milk and vanilla essence.
6. Pre heat the oven to 180 degrees C.
7. Divide the cake mixture into muffin cases.
8. bake for 40 minutes until the skewer inserted into the centre comes out clean.

Saffy’s Serving Ideas:

1. Warm with greek yoghurt and strawberries.
2. Warm with a drizzle of honey and a dollop of low fat creme fraiche.
3. With fresh fruit at breakfast.
