Orange Pancakes

Every now and again I come across a recipe that I need to completely re invent because the gut instinct tells me that the recipe is either too risky or really will not taste nice.  Sometimes I my judgement is not on point but usually I am spot on.  A pancake recipe I found in a magazine seemed like a great idea.  Chocolate and orange, but I could immediately tell that the quantity of ingredients would make the pancakes to bitter and sour.  Sometimes less really is more.  These are not my favourite pancakes but if you want to get more vitamin C in your diet there is no harm with doing so via pancakes.

This recipe was adapted from Morrisons Magazine (January/ February 2012).

Orange Pancakes


125g plain flour, a pinch of salt, 1 egg, 300ml skimmed milk, 1 orange (peeled and sliced), 1 tsp caster sugar, 1tbsp butter, icing sugar (to dust).


1.  Put the flour and salt in a bowl.
2. Make a well in a centre and add the gg.
3. Gradually mix in the milk until the batter becomes a smooth consistency.
4. Heat the butter in a frying pan.
5. Fry the pancakes in batches for roughly 2 minutes on each side.
6. Set aside and in the same frying pan fry the orange with the caster sugar for 30 seconds.
7. Pour the oranges over the pancakes and dust icing sugar over the top.
