Apple and Banana Pancakes

I have come to the conclusion that when you eat while listening to good music it makes the food taste a hundred times better.  The morning I made these pancakes I was listening to Motown music and fruity pancakes have never tasted so good.  Cinnamon gave the fruit an extra boost and the music gave the food an extra kick.  Try it yourself! Make breakfast and eat it with loved ones while listening to fantastic music.  Your mood will elevate by 60% at least.

This recipe was adapted from Morrisons Magazine (January/ February, 2013).

Apple Banana Cinamon Pancakes

Ingredients:

1 apple (peeled and chopped), 1/2 tsp cinnamon, 2 tbsps caster sugar, 125g plain flour, a pinch of salt, 250ml skimmed milk, 1 egg, 1 tbsp butter, 1 banana, icing sugar (to serve).

Method:

1. Put the apple in a pan with 1 tbsp water.
2. Add the cinnamon and sugar.
3. Heat the apple until soft.
4. Set the apple aside.
5. Put the flour and salt into a bowl.
6. Add the egg and mix.
7. Add the milk gradually until the pancake batter becomes smooth.
8. Heat the butter into a frying pan on a low to medium heat fry the pancakes in batches for 2 minutes on each side.
9. Peel and chop the banana and serve with the pancakes.
10. Pour over the apples and sprinkle icing sugar over the top.
