Orange and Sultana Cupcakes

Couple’s Song

I thought it was a load of foolishness that every couple had a song.  I was wrong.  It is supposedly quite romantic for couples to have their own song, but I think it is much better for couples to have their own cupcake.  This cupcake is based on a couple who quite frankly I think need to call it a day.  He is the fresh orange that sweetens the taste buds and she is the wrinkled up grape that gives a rough texture.  It tastes good but I sure didn’t give this a whipped topping with a cherry on top.

This recipe was adapted from Asda Magazine (March 2013)

Apple and Sultana Cupcakes

Ingredients:

125g self – raising flour, 1 tsp baking powder, 125g butter (softened), 125g caster sugar, 2 eggs, 3 tbsps orange juice, 80g sultanas.

Method:

1. Sift the flour and baking powder into a large bowl.
2. Beat the butter and sugar together until soft and creamy.
3. Beat in the eggs.
4. Add the orange juice and sultanas.
5. Divide the mixture into cupcake cases.
6. Pre heat the oven to 180 degrees C.
7. Bake for 30 minutes.
8. When the skewer inserted into the centre comes out clean cool for 15 minutes on a wire rack.
