Pancakes with Bacon and Syrup

I believe that every single person deserves to be treated special… Unless I put them in the scum of the earth category.  If I have somebody in my company who I think is super special I do my best to give an abundance of love.  For a particular person I made the most awesome fluffy pancakes with a side of bacon and maple syrup.  This has to be my loveliest pancake recipe yet, so make it for someone special.

This recipe was adapted from Good Housekeeping Magazine (July, 2013).

Yoghurt Pancakes and bacon with syrup


150g self – raising flour,  1 tsp baking powder, 16g caster sugar, 1 egg, 75g natural yogurt, 150ml whole milk, 20g butter, bacon slices, maple syrup.


1. Mix the flour, baking powder and sugar into a large bowl.
2. In a separate bowl mix the egg, yogurt and milk.
3. Pour the wet ingredients into the dry ingredients.
4. Mix everything together well.
5. Heat up the butter in a frying pan on a medium/ low heat.
6. Start grilling the bacon.
7. Fry the pancakes one at a time no more than 3 minutes on each side.
8. Serve the pancakes with the bacon on the side (after being grilled on both sides until crispy) and drizzle maple syrup over the top.
