Radio Time

So every now and again I have what I call radio time, which is where I catch up on my reading or studies but listen to the latest tunes at the same time.  When I was in primary school I would always be up to date with the latest songs, but these days I do not have much time to listen to the radio and as a dancer it is so not cool to be behind on the latest songs and dances.  So this is a light starter which is for moments when you just want to take it easy and chill.

This recipe was adapted from Morrisons Magazine (September, 2012).

Lunch Cups

Ingredients:

Ready roll puff pastry, light soft cheese, chicken ceasar sandwich filler, seafood cocktail sandwich filler, stoned olives, fresh coriander.

Method:

1. Grease cupcake holder baking tins.
2. Line the puff pastry into 4 – 6 holders.
3. In a small bowl mix 2 tbsps of the chicken filler with 2 tsps of soft cheese.
4. Fill half the pastry cups.
5. Repeat the same process with the seafood cocktail mix.
6. Bake the lunch cups at 180 degrees for 15 minutes.
7. Leave the cups to cool for 5 minutes.
8. Top each cup with an olive.
9. Add some fresh coriander at the top of the cups.
