Everybody needs a little sweetness every now and again.  So, rather than buying a ready made dessert why not make a super quick banoffee pie, bananas, cream and a homemade caramel with a super duper easy digestive base.

Speedy Banoffee


200g digestive biscuits, 90g and 4 tbsps butter, 1 cup sugar, 2 big bananas, whipping cream.


1. Bash the digestive biscuits in a freezer bag with a rolling pin until they have resembled fine breadcrumbs.
2. Melt 90g of the butter and mix in a bowl with the digestives.
3. Spoon the biscuits and butter into the base.
4. In a saucepan melt the 4 tbsps of butter.
5. Mix in a cup of sugar and 6 tbsps of water.
6. Once a thick syrup has been made remove from the heat.
7. Chop up the bananas.
8. Pour the caramel over the digestives.
9. Place the banana slices on top of the syrup.
10. Add the whipping cream over the top.
