Prawn Vegetable Rice Stir Fry

I had a long busy day.  Travelling, dancing and meetings.  After work the sun was hot and my body was tired, all I wanted to do was relax and enjoy some Saffy time.  Hot oils and a healthy stir fry.  Perfect for a summer evening.  Sweet baby corn, hot chilli, fresh prawns and perfectly cooked basmati rice seasoned to my liking.  Lovely.

This was adapted from Sainsbury’s Everyday Easy Magazine (2012).

Ingredients:

200g basmati rice, 1 tbsp sunflower oil, 150g peeled prawns, 1 red chilli (finely chopped and deseeded), 175g baby corn (chopped), 1 red onion (chopped), 4 spring onions (chopped), soy sauce, liquid maggie seasoning.

Method:

1. Cook the basmati rice and set aside.
2. Heat the oil in a wok.
3. Fry prawns and vegetables.
4. Add 2 tsps of the soy sauce and 2 tsps of the maggie seasoning.
5. When the vegetables and prawns have cooked add the rice.
6. When everything has been cooked through season to taste.

Saffy’s Suggestions:

1. Instead of using prawns you can use sausages.
2. Instead of using rice you can use egg noodles or rice noodles.
3. You can make a chilled salad and add fresh coriander as a garnish.
