Quick Haddock Pasta

No Glamorous Evenings 

When you are on your way to the top you have to be prepared to work late nights and ironically miss out on glamorous fun evenings.  However,  I do think it is all worthwhile in the end, so you just have to hang in there and keep yourself motivated.  I cooked this quick and easy pasta after a long day of trying to work on my dreams.  It tasted great, after I finished my meal I was ready to take on the world the next day… after a good long sleep of course.

This was adapted from Good Food Magazine’s 101 Cheap Eats (BBC Books, 2003).

Ingredients:

2 tbsps olive oil, 1 onion (finely chopped), 1 garlic clove (peeled and chopped), 100g boneless haddock flesh, 1 tsp dried oregano, 1 tbsp green pesto, 3 tsps sun- dried tomato paste, roughly 300g fusilli pasta.

Method:

1. Start cooking the pasta and drain when it has finished cooking.
2. In a medium saucepan heat up the oil on a medium heat.
3. Fry the onions and garlic.
4. Fry the fish and after 2 minutes add the oregano, pesto and tomato paste.
5. When the haddock has cooked add the pasta.
6. When everything has been mixed together remove from the heat and serve.
