Marshmallow Banana Pancakes

Pancakes can make your weekend mornings really beautiful.  On my weekend mornings I like to experiment with breakfasts.  This is one experiment that was a joy to all of the senses.  I love making different flavored pancakes.  One day I would love to have a crepe stove and learn to make French crepes.  I think my pancakes are really lovely and I think everyone should give themselves a break and have a few moments of peace and pancakes.

This recipe was adapted from Silvana Franco’s  The Really Useful Student Cookbook (Murdoch Books, 2007).

Marshmallow pancakes


125g flour, 1/4 tsp salt, 1 egg, 300ml milk, 50g marshmallows, 1 mashed banana, olive oil, Greek yogurt , fresh fruit, chocolate to melt and serve together.


1. Mix the flour, salt, egg and milk together to make a smooth batter.
2. Fold in the marshmallows and banana.
3. Heat 2 tbsps of oil in a frying pan.
4. Pour some of the batter into the middle of the frying pan and tip until the batter covers the whole pan.
5. Fry each side of the batter for about 2 minutes.
6. When the pancakes have browned and cooked drain on a paper towel.
7. Serve stacked with Greek yoghurt, fresh fruit and melted chocolate.
