Chicken Chow Mein

New Jacket

The day I made my first chow mein was the day I felt like living as if it really were a new day.  I wanted to have a day in which I forgot about my troubles.  It was short-lived.  But… I brought a new jacket and made a dish I had never tried before.  Sometimes we do not achieve our goals but what is important is that we  did the best we could.  Chicken Chow Mein has always been my favourite Chinese dish.  And now that I can make it I know that I will never need the takeaway.

This recipe was adapted from Good Housekeeping Magazine (April, 2013).



2 tbsps sunflower oil, 2 chicken breasts (diced), mushroom stir fry pack, 1 tsp sesame oil, 2 tsps grated ginger, 2 tsps garlic powder, 1 tbsp cornflour, 1 1/2 tbsps oyster sauce, 1 1/2 tbsps tomato ketchup, 2 tbsps light soy sauce.


1. Heat the oil in a wok and fry the chicken until it is cooked.
2. Add the vegetables.
3. Add the sesame oil, ginger, garlic powder, cornflour, oyster sauce, ketchup and soy sauce.
4. Stir everything for 6 minutes.
