Blueberry Banana Muffins

Blueberry Banana Bounty 

I made muffins for breakfast because I felt like giving love in abundance.  These muffins are yummy and taste fantastic warm for a late breakfast.

This recipe was adapted from Good Housekeeping (June, 2013).



100g butter, 150g caster sugar, 2 eggs, 300g plain flour, 3 tsps baking powder, 150ml skimmed milk, 2 tsps vanilla extract, 125g blueberries, 2 bananas (mushed).


1. Beat the butter and the sugar together.
2. Mix in the eggs.
3. Add the flour and baking powder.
4. Mix well.
5. Add the milk to loosen the mixture.
6. Add the vanilla and fold in the blueberries and bananas gently.
7. Divide into muffin cases.
8. Pre heat the oven to 180 degrees C.
9. Bake for 35 minutes until the muffins have risen and are golden.
