Scrambled Egg, Bacon and Crumpets

Whatever you like

For West Indians the rule is pretty much “if it’s good for dinner, it’s good for breakfast”  Basically you can eat whatever you damn well please.  I follow this rule through and through.  Especially on Sundays.  I did not have the ingredients to make a bacon sarnie for my partner so improvised.

This recipe was adapted from Sainsbury’s Magazine (2012).

egg crumpet bacon


1 tsp sunflower oil, 1 egg, skimmed milk, salt and pepper, bacon slices, 2 crumpets, butter.


1. Heat the oil in a small frying pan. Start frying the bacon.
2. In a small bowl beat the egg and a splash of milk.
3. Season with salt and pepper then fry in the pan to make a scramble.
4. When the bacon and egg has cooked serve with toasted crumpets and butter.
5. Serve with table sauces of choice.
