Eggs and Salmon Scramble

Don’t Change

There are some things that just shouldn’t be changed.  Eggs and salmon makes a beautiful breakfast.  It is a classic combination and is always a hit with my partner and mother.  It is a real blessing to have eggs and Scottish smoked salmon for your first meal in the morning.

This recipe was adapted from The Really Useful Ultimate Student Cookbook, (Murdoch Books, 2007).

Smoked Salmon Scramble


1 tbsp oil, 1/2 onion chopped, 2 eggs, salt and pepper, skimmed milk, a few cherry tomatoes, a handful of chopped fresh herbs, margarine, wholemeal bun.


1. Heat the oil in a frying pan.
2. Heat the onion in the pan.
3. In a small bowl beat the eggs.
4. Add the milk, tomatoes and herbs.
5. Scrambled the egg mixture and season.
6. When the eggs are cooked remove from the heat and serve with a buttered wholemeal bun.
