Money and Happiness 

I was listening to a debate on Radio 4 about whether money can buy you happiness.  In my opinion yes, yes it can.  But the best things in life to make you happy shouldn’t have to cost you the earth.  My aunt used to make the most amazing macaroni pie, then my cousin became the macaroni cheese maker, but I have finally created a macaroni cheese worthy of serving to others.  And yes it was my first attempt.

This recipe was adapted from Sam Stern’s Student Cookbook (Walker Books).



1 tsp oil, 225g macaroni, 50g butter, 50g plain white flour, 100ml skimmed milk, 200g grated cheddar, 1 tsp English mustard, 1 tsp lemon juice, tomato ketchup (trust me).



1. Boil a saucepan of water with the oil.
2. Cook the macaroni until soft.
3. Drain the macaroni.
4. In a small saucepan melt the butter and mix in the flour.
5. Whisk into a sauce gently pouring in the milk.
6. Remove from the heat and mix in the cheese.
7. Mix the cheesy sauce, macaroni, mustard and lemon juice together.
8. Add a few dollops of tomato ketchup and season to taste.
9. Put the macaroni cheese in an oven dish and top with extra cheese and a drizzle of tomato ketchup.
10. Bake in the oven for 35 minutes at 180 degrees C.
