Raisin Banana and Apple Muffins

Fruits and flowers are a wonderful way to liven up a living room and kitchen, but muffins can add a wonderful aura too.  My kitchen and living room had a lovely aura.  Food can enrich your surroundings as well as your body.  Having pleasant sights and smells around you can do wonders to your mood.  I made these healthy muffins perfect for breakfasts and snacking during the day. I used oats, wholemeal flour and fresh fruit.

This recipe was adapted  from The Complete Low – Fat Cookbook (Bay Books, 2003).

Ingredients:

200g raisins, 150g wholemeal self – raising flour, 125g plain self – raising flour, 1 tsp ground cinnamon, 1 tsp mixed spice, 100g soft brown sugar, 4 small apples (pureed), 1 egg (beaten), 250ml skimmed milk, 2 tbsps vegetable oil, 1 banana (mashed), 20g porridge oats.

Method:

1. Put the raisins in a bowl and covered with boiling water.  Leave for 30 minutes and then drain.
2. While preparing the raisins sift the flours into a large mixing bowl.
3. Ad the spices and 95g of  brown sugar.
4. Combine the dry ingredients well.
5. In another bowl mix the apples, egg, milk, oil and banana.
6. When combined add to the dry ingredients.
7. Pre heat the oven to 180 degrees C.
8. Fold in the sultanas and the porridge oats.
9. Add the remaining soft brown sugar.
10. Divide the mixture into muffin cups which have been placed in a muffin tray.
11. Bake for 20 minutes.
12. Cool the muffins for 5 minutes on a wire rack before serving.
