Tuna Vegetable Pasties

My pasties are weekday winners not just because they are quick, easy and allow creativity but because they are comforting and ooze with love.  Who doesn’t love a good hot pastry filled delight.  Savoury or sweet there is nothing like home-made pastry wrapped up in a duvet.  I went through my cupboard, rustled up a delicious pasty filling with my favourite vegetables.  Made my own pastry and proudly delivered my meal.  Just like that.  Mushy peas, cheese, sweetcorn and tuna.  Oh yeah!

Ingredients:

1 tin mushy peas, 1 tin tuna in water (drained), 1 tin sweetcorn, 50g mild cheddar cheese (grated), tomato ketchup, white pepper and salt, 225g wholemeal flour, 100g butter, 1 egg.

Method:

1. In a bowl mix the mushy peas, sweetcorn and cheese together in a bowl.
2. Add a dollop of ketchup.
3. Season to taste with salt and pepper.
4. Set this aside.
5. In another bowl pour the flour into a large bowl.
6. Rub the butter into the flour until it resembles fine breadcrumbs.
7. Add 5 tbsps of water, a little at a time until a dough can be formed.
8. Knead to form an elastic dough.
9. Roll out on a lightly floured surface.
10. Pre heat the oven to 180 degrees C.
11. Cut out 4 large circles.
12. Place some of the mixture into each circle.
13. Seal the pastry into the middle to make pasty shapes.
14. When all of the pasties have been made beat an egg to make egg wash.
15. Spread the egg over the pasties.
16. Bake for 25 minutes.
