Top Hat Bagel

It’s Showtime

I named this breakfast meal after the iconic top hat.  The top hat symbolises show time, success and pride all the things you need for a Monday morning.  I was told by a special person that the clothes that you way and the way you move can reflect how you feel inside.  My breakfast is sure to help you awaken and put on those bold clothes and push you to put your best foot forward. Shoulders back, head up… It’s Showtime.  I used 2 types of cheese in my egg bagel and used a variety of lovely vegetables.

Ingredients:

1 bagel, sour cream, butter, 1 tbsp sunflower oil, 2 eggs, 2 spring onions chopped, a handful of spinach (chopped), 4 cherry tomatoes (halved), skimmed milk, salt and pepper.

Method:

1. Half the bagel and spread the middle with butter and or sour cream.
2. Heat the oil in the frying pan over a medium heat.
3. Beat the eggs, spring onions, spinach, tomatoes and a dash of skimmed milk together.
4. Scramble in the pan and season with the chive and salt and pepper.
5. When the egg has cooked serve with the bagel.
