Tomato and Cheese Pasta Casserole

This is a weekday meal which is not only comforting but energizing.  It is full of carbohydrate goodness to refuel your body after a long working day.  I made this for my partner to get him through his long work hours.  In the weekday you can’t just let go as you would at the weekend.  You have to stay focused and push through with your daily tasks.  This meal will help for certain.  It is a super easy lazy meal,  I used vegetable soup, tomato sauce and lots of cheese.  Casseroles are great for using up leftover food.   I used extra cheese for extra comfort.  🙂  (I also added hot pepper sauce for a spicy kick, but if you do not want it spicy leave the sauce out.)

Ingredients:

300g fusilli pasta, 250g vegetable soup, 150g tomato and vegetable pasta sauce, 60g grated cheddar cheese, salt and pepper, 1 tsp hot pepper sauce, 1 tsp mixed herbs, 20g grated parmesan cheese.

Method:

1. Heat half a medium saucepan with salted water and bring to the boil.
2. Add the pasta and leave to cook stirring occasionally.
3. When cooked through drain.
4. Put the pasta into a casserole dish.
5. Stir in the soup, sauce and cheese.
6. Season and add the hot pepper sauce and herbs.
7. When the pasta is coated and season sprinkle the parmesan cheese over the top.
8. Bake for 20 minutes at 180 degrees C in the oven.
9. Le ave for 10 minutes before serving.
