Lemon and Honey Chicken with Avocado Rice

Sometimes I cook dishes that are so lovely I wish I could share them with all of the people who support me and I love back.  Luckily I had my partner with me so I was pleased he could taste my latest recipe.  The chicken was juicy and fresh and the rice was packed full of flavour.  I made a quick Caribbean version of rice and peas and livened it up with seasoning, spring onions and avocados for a spring time feel.  Perfect for a relaxing Sunday evening.

This recipe was adapted from Good Food Magazines 101 Cheap Eats (BBC Food, 2003) and Morrison’s Magazine (March/ April 2013).

Ingredients:

2 lemons, 1 lime, 25g butter, 2 tbsps honey, 2 garlic cloves (finely chopped), 3 rosemary sprigs (leaves stripped from the stalks), 4 chicken legs (thighs can also be used), 250g basmati rice, 1 vegetable stock cube, salt and pepper, 1 can kidney beans (drained), 4 spring onions (chopped), 3/4 large avocado (chopped)

Method:

1. Squeeze the juice from a lemon into a small pan.
2. Also add the honey, butter, garlic and rosemary.
3. Heat gently until the butter melts.
4. Prepare the chicken and place into an oven proof dish.
5. Pre heat the oven to 180 degrees C.
6. Pour the contents of the pan over the chicken.
7. Bake for 1 hour and 15 minutes. Leave it to rest for 10 minutes.
8. About 40 minutes after the chicken has started to cook prepare the rice in a medium pan.
9. Add water to the rice in a pan until the water is an inch above the rice.
10. Put the rice to the boil.
11. Let the rice simmer and sprinkle the stock cube into the rice. Stir occasionally.
12. When the water has almost evaporated add a 1/4 cup of water and the kidney beans and spring onion.
13. Let the rice cook for a further 8 minutes. Stirring occasionally.
14. Remove from the heat.
15. Stir in the chopped avocado with the rice.
16. Serve the rice and chicken together.

Leftovers?

Make a chicken and rice spring salad.  Try making a French or lemon and herb dressing to drizzle over the top.
