Tuna Olive Spinach Pizza

I love eating good food with people because it helps me to create happy memories.  Pizza is the ultimate sharing food and it is so much fun making your own.  You can make the most ridiculous toppings to the most simplistic.  My rule is with a meal like this either be super creative or make something you know is going to be lovely.  Everyone knows I love spinach so I had to make a spinach loaded pizza. Don’t like spinach? Take it out and keep it simple with olives, tuna and onion.

This recipe was adapted from Good Food Magazine’s 101 Cheap Eats (BBC Books, 2003).

Ingredients:

1 pizza base, 2 tbsps sunflower oil, 1 onion (chopped), tomato and vegetable pasta sauce, 2 tsps mixed herbs, 1 can of tuna, 85g stoned black and green olives (chopped), 70g of grated cheddar and mozzarella  2 handfuls of chopped spinach leaves, 2 tbsps chopped fresh basil leaves.

Method:

1. Heat the oil in a frying pan.
2. Add the onion and fry until the onion is golden.
3. Set the onion aside.
4. Spread the tomato sauce on top of the base.
5. Flake the tuna over the top.
6. Scatter the olives.
7. Layer with the herbs and spinach.
8. Add the cheese on top.
9. Sprinkle some extra basil over the top.
10. Pre heat the oven to 180 degrees C.
11. Bake the pizza for 20 to 25 minutes until the base has browned.
