Hot Cross Bun Pudding

Pudding Feelings

Making puddings makes me happy, simple.  I have dreamed about having my own restaurant and making my own beautiful recipes.  There is nothing like watching people eat my food and smiling afterwards.  I made a pretty basic pudding today but I served it with a butterscotch banana sauce.  Any pudding can be jazzed up with something really special.

This recipe was adapted from Good Food Magazine’s 101 Cheap Eats (BBC Books, 2003).



Butter, 6 hot cross buns, 300ml skimmed milk, 300ml single cream, 1 tsp vanilla seeds, 1 tbsp ground cinnamon, 100g soft brown sugar, 4 eggs, 2 tbsps caster sugar for sprinkling over the top.



1. Butter the buns and lay them in a dish.  Place them butter side up layering them.
2. Pour the milk and cream into a pan.
3. Add the vanilla and cinnamon.
4. Heat gently until it just comes to the boil and set aside.
5. In a bowl whisk together the sugar and eggs until frothy.
6. Whisk the two mixtures together.
7. Pour over the buns.  Leave the pudding to stand for 10 minutes.
8. Sprinkle over the caster sugar.
9. Bake for 40 minutes in a pre heated oven at 180 degrees C.
