Lemon Cupcakes

“Dear John Letter”

I made these cupcakes inspired by my Bible studies group.  I felt like making pleasing food to the eye and pleasing at the heart.  I read many passages about how keeping up appearances and showcasing your faith is not enough to prove that you are a good person.  Your soul and heart must be full of love and pure, otherwise the false impression you give will be displeasing not just for others but for yourself.  I made cakes which would look beautiful on the outside and taste lovely on the inside.  These lemon cakes are the bees knees, they are so delicious and the lemon syrup allows a citrus flavour to burst through.  Sunshine and Smiles, just what cakes should be.

This recipe was adapted from Asda Magazine (March, 2013).

Ingredients:

125g self-raising flour, 1 level tsp baking powder, 125g butter (softened), 125g caster sugar, 2 large eggs, juice from 1 lemon, 3 tbsps caster sugar, 10ml water, icing pens.

Method:

1. Beat the butter and sugar together in a bowl until creamy.
2. Beat in the eggs, beating well after each addition.
3. Mix the flour and baking powder together before adding to the butter, sugar and eggs.
4. Pre heat the oven to 180 degrees C.
5. Divide the mixture into cupcakes and place in cupcake tin holders.
6. Bake for 25 minutes.
7. 5 minutes before the cupcakes have finished baking heat the lemon juice, water and 3 tbsps of caster sugar in a small saucepan.
8. When the cakes have finished baking and the skewer comes out clean when inserted into the centre of the cake pour the lemon syrup over the cupcakes.
9. Wait for the cupcakes to cool before decorating.
