Banana Pancakes with a Toffee Sauce

I love-making heavenly comfort food for my man all the time.  Always putting in that extra effort in my food for people I love like my partner and mother is my way of saying how wonderful I think they are.  My people are wonderful, my people are worth all the effort.  Show how worth it your people are with these luxurious pancakes.  Warm toffee sauce with steaming bananas and beautiful fluffy light pancakes.

This recipe was adapted from Sainsbury’s Everyday Easy Magazine (2012).



75g plain flour, 1 tbsp caster sugar, 1 medium egg, 175ml whole milk, sunflower oil, 10g butter, 4 tbsps soft brown sugar, 4 tbsps guava juice, 2 bananas sliced on the diagonal, creme fraiche.



1. Mix  the flour and sugar in a bowl.
2. Whisk together the egg and milk separately.
3. Pour the egg and milk into the flour and sugar and beat until it makes a smooth batter.
4. Leave to rest for a minimum of 10 minutes.
5. Smear some of the oil in a small frying pan and heat.
6. Pour in some of the batter.
7. Cook until lightly browned for about a minute then flip and cook the other side until lightly browned also.
8. Transfer onto a warm plate and keep repeating until the batter has been used up.
9. In a separate pan heat the butter, brown sugar and juice in a pan and heat gently stirring constantly.
10. When bubbling add the banana and warm through for a few minutes.
11. Top the pancakes with the sauce and spoon over creme fraiche.
