Saucy Vegetable Pasta

Hearty Food

When I speak about hearty food I do not only mean filling food but food that is good for the heart.  Food that feuls the heart and food that makes the heart feel warm and happy.  This meal was orginally a soup but I made it a bit more filling by adding extra pasta.  It was very tasty and I used some of my favourite vegetables.  There is something about pasta that just reminds me of friendship.  A sharing food. I also used my special fussili tricolore.

This recipe was adapted from Asda Fit For Life Recipe Cards.

Heart Vegetable Pasta


1 tsp vegetable oil, 1 medium red onion (Chopped), 2 carrots (chopped), 1 big leek (chopped),400g chopped tomatoes with chilli, 300ml vegetable stock, 1 tbsp tomato ketchup, 100g frozen spinach, 60g fussili tricolore, 2 tsps mixed herbs, ground black pepper.


1. Heat the oil in a large saucepan.
2. Add the onion, carrots and leak.
3. Fry gently for 4 minutes.
4. Add the tomatoes, stock and fussili tricolore.
5. Bring to the boil then add the spinach, herbs and black pepper.
6. Lower the heat and simmer for roughly 20 minutes stirring frequently.
7. When the pasta is completely cooked through season to taste and serve.
