Chocolate Cupcakes with Pineapple Cream Cheese Frosting

“Ya Got Ta Be A Conduckta !”

When I was making these delicious treats I was listening to my favourite soca song from last year called Conduckta by Dutty Android.  Okay so like most soca songs it was about whining and getting down in your dancing but there was another message in the song which meant a lot to me.  Being the conductor in your life means taking control of your own life and making the most of every situation.  Android sings about dancing but me I sing about being in control of my life and doing what I want to do.  These cupcakes demonstrate how I like to be creative.  Like on the dance floor I feel a sense of freedom in the kitchen.  So thanks to an energy I hadn’t felt in a long time I made these cupcakes with mayonnaise and pineapple cream cheese.  This is My life, I am the conduckta till the end.

This recipe was adapted from Cooking Light (October 2006).


(Serves 16)


For the cupcakes – 1 cup granulated sugar, 1/2 cup mayonnaise, 1/4 cup canola oil, 1/2 tsp vanilla extract, 1 1/2 cups self – raising flour, 1/2 cup cocoa powder, 1 tsp baking soda, 1/2 tsp baking powder, 1/4 tsp salt, 1 cup buttermilk.
For the frosting – 2 oz full fat cream cheese, 6 oz pineapple cream cheese, 1 cup icing sugar, 1/2 tsp vanilla extract, dash of salt.



1. In a large bowl beat together the sugar, mayonnaise, oil and vanilla extract.
2. In another bowl mix the flour, cocoa powder, baking soda, baking powder and salt.
3. Stir the flour mixture into the sugar mixture alternating with the buttermilk.  Start with the flour and end with the flour.
4. Blend everything well.
5. Pre heat the oven to 180 degrees C.
6. Divide the batter into muffin or cupcake liners in the holders, roughly 2 tbsps in each liner.
7. Bake for 18 minutes. The cupcakes are done when after a wooden pick is inserted into the centre and moist crumbs are attached.
8. When the cupcakes are done remove and cool on a wire rack.
9. As they are cooling prepare the frosting.  Combine the cream cheese, icing sugar, vanilla extract and salt into a medium bowl.
10. Beat with a mixer at a medium speed until well combined.
11. Increase to a higher speed and beat until smooth.
12. Pipe or spread onto cupcakes.
