Spinach Wild Rice

Sometimes when you cook it’s not about cooking spectacular and fanciful food.  Most of the time it is just about cooking food that tastes really good and fills your belly to keep you going the whole night.  My wild rice is not going to be in a five star restaurant but it will nurture an athletic body back to life.  Iron loaded goodness, it does what it do.

Spinach Wild Rice


4 cups wild rice, 200ml vegetable stock, 200g fresh spinach, salt and pepper.


1. Wash and prepare the rice in a medium sized saucepan.
2. Add water until it rises about an inch above the rice.
3. Bring the rice to a boil on a high heat and then reduce to simmer.
4. After 15 minutes add the stock and stir.
5. After 15 more minutes add the spinach and stir in.
6. When the spinach has wilted season with salt and pepper.
7. When the rice is fluffy and soft serve as a side dish.

Saffy’s wild Salad Transformation:

To turn the rice into a main meal salad pour into a large bowl and add some pine nuts for some crunch and some wild Scottish salmon.  Sprinkle a little lemon juice over it and voila!
