Coconut Lime Biscuits

Tropical Flavours 

I am going to tell all of you a little secret about  my cooking.  Whenever I cook using tropical flavours I feel a heightened sense of sweet nostalgia and become overwhelmed with memories of the only place I have truly called home.  Coconut and Lime just shout out paradise, so here is my recipe for wonderful cookies kissed with tropical flavours.

This recipe has been adapted from Sam Stern’s Student Cookbook (Walker Books).



225g self – raising flour, pinch of salt, 150g butter, 110g caster sugar, 1 egg (beaten), 25g dessicated coconut, 1 tsp grated lime zest, 1 1/2 tbsp lime juice.



1. Sift the flour and salt into a bowl.
2. Cut in the butter.
3. Rub between your fingers until it resembles fine breadcrumbs.
4. Add the sugar, coconut, lime zest and lime juice.
5. Mix in the egg.
6. Using a metal fork mix everything together until a soft dough is made.
7. Roll into a ball and wrap in cling film.
8. Chill for 30 minutes.
9. Pre heat the oven to 180 degrees.
10. Roll out the dough on a floured board and cut into cookie into rounds.
11. Place on a baking sheet on a baking tray and bake for 12 – 15 minutes until pale brown.
