Burst of Orange Biscuits

March 10, 2013

Burst of Orange

My partner visited to support me after a difficult event.  I wanted to thank him for supporting me so I made him these orange biscuits to take back with him.  I made these bright orange biscuits to represent the joy I feel when he’s around and to symbolise troubling periods will vanish with time and care.  He really enjoyed them, a great cheerful tea treat.

This recipe was adapted from Sam Stern’s Student Cookbook (Walker Books).

225g self raising flour, pinch of salt, 150g butter, 110g caster sugar, a few drops of orange colouring, 3 tsps orange zest, 2 tbsps orange juice, 1 egg (beaten).

1. Sift the flour and salt into a large bowl.
2. Cut in the butter.
3. Rub the mixture with your fingers until the mix turns into fine crumbs.
4. Add the sugar, a few drops of orange colouring, zest and juice.
5. Add the egg and work the mixture with a fork to make a stiff dough.
6. Work into a ball and wrap in cling film.
7.  Chill in the fridge for 30 minutes.
8. Pre heat the oven to 180 degrees C.
9. Roll out the dough onto a floured board.
10. Cut into cookie shapes and place on a baking sheet on a baking tray.
11. Bake for 12 – 15 minutes.

Saffy’s Extra Treat Tip:

The biscuits taste lovely with cream cheese.  Sandwich them with full fat cream cheese to make them look like whoopie pies.  Orange and cream cheese are a lovely combination
