Cheese Palmiers

Cheese Palmiers 

These bonny snacks were a joy to make.  I would recommend using this recipe to get rid of left over puff pastry and as party snacks or pre dinner appetisers.  They are delicately flavoured so if you are not one for subtlety I would recommend adding some chilli powder or a stronger cheese for a stronger flavour.  I used a mild cheddar cheese,  I didn’t feel it necessary to overwhelm the palate especially I was cooking heavily spiced food that day.

This recipe was taken from The Dairy Book of Family Cookery (Ebury Press, 1983).


Cheese Palmiers and special scramble


200g packet puff pastry, 1 egg beaten, 70g mild cheddar cheese (grated), salt and black pepper, paprika.


1. Roll out the pastry into an oblong shape.
2. Brush with the beaten egg.
3. Scatter over the cheese.
4. Sprinkle a little salt, black pepper and paprika over it.
5. Roll up the pastry tightly.
6. Cut to make pin wheel shapes.
7. Place cut side down on a greased baking sheet and flatten slightly.
8. Bake in the oven at 200 degrees C for 16 – 18 minutes.
