Cranberry & Chestnut Stuffing

Queen of the Stuffing 

I am the self proclaimed queen of the stuffing!  My stuffing is always a hit and it always tastes irresistible!  I can’t wait to start throwing dinner parties and show off my stuffing making skills.  I could just imagine myself on one of those reality shows where the women express their delight and envy at my food.  Go Queen Saffy!

This recipe was adapted from Sainsbury’s Recipe Cards (December 2012).



60g butter, 1 large onion (finely chopped), 3 garlic cloves (finely chopped), 100g canned chestnuts in water (chopped), 150g cranberry sauce, 1 tbsp dried parsley, 1 tbsp dried thyme, 1 tbsp dried sage, 200g wholemeal breadcrumbs, 1 large egg beaten.


1. Melt 1/2 butter in a saucepan.
2. Cook the onion and garlic.
3. When soft add the chestnuts and 100g of the sauce.
4. After 7 minutes set aside.
5. In a bowl mix the bread crumbs, egg, herbs and the rest of the sauce.
6. Mix the contents of the saucepan into the bowl.
7. Spoon the stuffing into an oven proof dish.
8. Cook for 30 minutes at 180 degrees C.
9. Let the stuffing cool for 3 -5 minutes before serving.
