Bran Apple Cake

All Bran

I haven’t got a clue how to categorise this invention but it is full of fibre, sweet, has a unique soft middle with a  crunchy topping and is a great alternative to pancakes and cream filled cakes.  It is also a nice thing to do with all bran.  Quite a few people I know hate this cereal and usually associate it with old people.  So here is another bran recipe in addition to my take on Bajan Bakes. Love ya bran people! Love ya fibre!



300g All Bran, hot water, 2 cox apples (peeled, chopped and stewed), 100g soft brown sugar, 100g crème fraiche, 120g plain flour.


1. Submerge the All Bran in hot water and let it settle for about 10 minutes.
2. Mix in the apples, sugar and fraiche.
3. Sift in the plain flour and mix everything together well.
4. Pour into a 23 inch baking tin.
5. Bake for 45 minutes at 180 degrees C.

Saffy’s Serving Ideas (depending on the meal):

1. Breakfast – Fruit or Yoghurt.
2. Snack – Hot fruit, scrambled eggs.
3. Dessert – Serve hot with Crème Fraiche
