American Banana Pancakes with Streaky Bacon

Big Man’s Breakfast

I wanted to make my partner a proper American breakfast.  There was a lot of Superbowl hype and Pancake Day was being advertised quite a bit so I thought to combine the two events, with help from The Hairy Bikers.  This breakfast is super filling and must be served in big portions otherwise it just won’t feel right or American enough.  Me I had to settle for strawberries for I was a little overwhelmed at my own creation.  My poor tummy was so confused.  My partner enjoyed the breakfast, my pancake making skills have definitely improved.  I personally prefer  my banana rum pancakes, but for those who like a bit of meat and sweetness this breakfast is perfect.

This recipe was adapted from Good Housekeeping Magazine (December 2012).

American Banana Pancakes with Bacon

(serves 4 – 6)

Ingredients:

275g self raising flour, 2 medium eggs, 2 tbsps soft brown sugar, 300ml whole milk, 2 medium bananas (roughly chopped and mushed), 3 tsps mixed spice, 2 tbsps sunflower oil, 8 streaky bacon rashers, 25g butter, maple syrup.

Method:

1. Sift the flour into a large bowl.
2. Beat in the eggs, sugar and milk.
3. Beat in the banana until everything has been mashed up together.
4. Stir in the mixed spice.
5. Heat the oil in a non stick frying pan over a medium heat.
6. Fry the pancakes frying for 3 minutes on each side before flipping.
7. Drain the pancakes onto kitchen towels and keep warm covering with foil or in a warm oven.
8. Once the pancakes have been done fry the bacon in the remaining oil.
9. Divide the pancakes onto plates.
10. Melt the 25g butter and spread this over the pancakes.
12. Top the pancakes with the bacon.
13. Drizzle the maple syrup over everything.
