Blueberry Pancake Cake

I don’t know what it is about countdowns but people get super excited about holiday seasons.  From the first of January people had already started counting down the days to Kadooment (Bajan Carnival), the summer holidays in general, Easter and Pancake Day.  I always miss making pancakes on pancake day, it is very frustrating.  I also usually miss world sandwich day too.  Sigh.  I wanted to be very random as I was having a very boring study day.  I decided to bake pancake batter rather than fry it and it actually tasted pretty nice with a cool pone consistency.  The outside was crunchy and the inside was soft sweet and delightful.  Simple yet satisfying.  Also these are pretty fun to make as the mixture turns to a surreal purple colour.  Cooking was the highlight of my day for sure.



112g plain flour, 2 medium eggs, 50g butter,  12 ml skimmed milk, 200g blueberries (blended),

Blueberry Pone


1. Sieve the flour into a bowl.
2.  Make a well in the centre and beat in the eggs.
3.  Add the milk and blueberries.
4. Pour into a prepared square baking tin.
5. Bake at 180 degrees C for 25 minutes.
