Strawberry Bread and Bites

Sweet & Unique 

I really enjoyed this treat.  I love the idea of using the natural sugars of food products and turning them into something beautiful.  I was trying my hardest to reduce the amount of sugar I was taking in so I was determined to make a range of treats that didn’t leave me wondering if I was eating the best possible meal option.  There is nothing wrong with treating yourself, but during training periods you get a better feeling when you are treating yourself on foods relatively low in sugar leaving you fuller for longer.  My strawberry loaf in really light and beautiful.  It has a crunchy crust and a lovely soft centre.



200g strawberries (blended), 125g margarine, a splash of vanilla essence, 2 dollops fat free Greek yoghurt, 3 spoons flaxseed, 1 tsp lemon juice, 2 eggs, 125g self raising flour.



1. Mix the strawberries and margarine.
2. Add the essence.
3. Mix in the yoghurt, flaxseed and lemon juice.
4. Beat in the eggs, if the mixture starts to curdle add a spoon of flour while beating.
5. Sift in the flour and fold into the mixture.
6.  When everything has been mixed together well prepare a square baking tin and loaf tin.
7. Using a spoon spread the mixture into the square tin no higher than an inch.
8. Pour the rest of the mixture into a loaf tin.
9. Bake the ingredients in the square tin for 15 minutes at 180 degrees C.
10. Bake the loaf for 1 hour 10 minutes also at 180 degrees C.
11. When baked leave to cool before cutting into squares and/ or slices.  Enjoy hot as well as cool.


Unique Serving Tips:

1. Low fat cream cheese.

2. Blended raspberries.

3. Low fat margarine.

4. Low sugar marmalade.
