Kiwi Bread and Kiwi Bites

I am a genius in my academics and in my kitchen.   This bread, snack thing is just….. wicked.  It’s strange. Very strange.  It is the sort of thing you eat when watching a Star Trek marathon after finishing off a 3000 word essay and roaming campus looking for batteries.  Yes it’s this kind of treat.  Kiwi fruit, yoghurt, flaxseed in a moist loaf.  It works people!

5 kiwi fruits (skinned and blitzed), 2 eggs, 125g self- raising flour, 2 tsps lemon juice, juice 1/2 lime, 3 spoons flaxseed, 2 dollops yoghurt, 125g margarine, 1 tsp vanilla essence.



1. Mash up the margarine and the kiwi.
2. Keep beating until the lumps are reduced.
3. Add the eggs, lime juice and lemon juice.
4. Mix this very well.
5. Sift in the flour and the flaxseed.
6. Fold the ingredients.
7. Fold in the yoghurt.
8. Mix in the vanilla essence.
9. Spread an inch of the mixture into a prepared square tin. No higher than an inch.
10. Pour the rest of the mixture into a prepared loaf tin.
11. Bake the bites for 20 minutes and the loaf for an hour at 180 degrees C.
12. When the bites are done cut into squares.
13. When the kiwi bread is done serve hot.


Alien Serving Ideas:

1. Medium Cheddar and fruit chutney.
2. Yoghurt.
3. Hot mushed banana.
4. Pitted Prunes.
