Chapter 9

Safiya wanted her Christmas table to be bright and colourful.  So far the colours of the foods were bright and cheerful and the blue from the good china gleamed in the candlelight.  It wasn’t enough for Safiya.  She wanted something green and not just the usual vegetables.  So she created another recipe that she hadn’t planned on doing.  Her mother expressed her likeness for the last experimental mash Safiya made, which gave Safiya the ingenious idea of making gloopy mash with spinach.  It was so strange it was awesome.  Saffy’s mash kicked beat ordinary school mash into the ground! “Mash it up eh eh!”



200g potatoes (peeled and roughly chopped), 4 handfuls of spinach, salt and pepper, 15ml double cream, 1 tsp sweet tomato chutney, 1tbsp chopped coriander.



1. Boil the potatoes until soft.
2. Wilt the spinach in the meantime.
3. Blend the potatoes and spinach together.
4. Put the spinach and potatoes in a bowl then add the cream.
5. Mix well then add the chutney and coriander.
6. When all the ingredients are combined add the salt and pepper then season to taste.
7. Garnish with the coriander.
