Saffy’s Chirstmas Cook – Off

Chapter 6

Sweet Morning

It was Christmas Day and Safiya had a big cooking day ahead of her.  She had to pace herself but felt that though she wasn’t a big eater she didn’t want to bow out and ruin it for her mother.  She woke up eager to please and made her mother her unique Bajan Bake recipe.  She loved her Bajan Bakes and as she made them she dreamed that one day she would be able to make them for a family of her own.  She used raisins, all – bran and cinnamon.  They were so crisp and filling, such a breakfast would have had a standing ovation in Barbados.



200g all bran, 100ml skimmed milk, 100g plain flour, 1 tsp cinnamon, 50g raisins, 50g caster sugar, 1 medium egg, oil for frying.


1. Mix all of the ingredients apart from the oil in a large bowl.
2. Heat a lot of oil in a large frying pan.  (More than if your were frying pancakes as if you were using deep-frying.)3. Scoop the mixture with a spoon and place the dollops into the pan.
4. Fry each side until lightly browned, roughly 1 -2 minutes per side.  (Depending on how crispy you like them.)
5. They should be crispy on the outside and soft on the inside.
6. Put onto paper towels after frying to soak up the oil.

Saffy’s Bajan Must:

They should be served with grapes and eggs traditionally.  You can also serve them with a variety of fruit.  On rare occasions the Bajan way is the Birdspeed way is the right way. 😉

    when it comes to breakfasts, i really love some solid heavy meal with eggs and bacon in it..

    • You can eat Bajan Bakes with eggs and fruit on the side. The all bran adds a density to the texture so it is filling as well as delicious. I would not add bacon to the bakes because the salt will not compliment the flavour. If you want something with protein then I would suggest grilled salmon with a little lemon drizzled on top. The salmon could be mixed into the scrambled eggs.
