Banging Tofu Stir Fry

Brilliant Meal

There are some days when you are so busy you just need to have a meal which is super quick to prepare because you are so busy.  I had a lot of reading to do so I really had to push myself and focus on my work.  I still wanted to have a nutritious, fun and flavoursome meal, so I browsed quickly through my fridge and all the ideas started firing through my head.  The stir fry is full of fresh vegetables and it is packed full of flavour.



1 tbsp vegetable oil, 1 red onion (chopped roughly into small pieces), 1 green chilli (de seeded and chopped), 100g mushrooms (wiped and chopped), 2 handfuls of baby spinach (washed and chopped roughly), a handful of cherry tomatoes (quartered), sweet chilli sauce, black pepper, lemon juice.


1. Heat up the oil in a wok on a medium heat.
2. Fry the onion until soft.
3. Add the chilli and mushrooms.
4. After 5 minutes add the spinach, tomatoes and sweet chilli sauce.
5. Wait for the spinach to wilt.
6. Season with black pepper and lemon juice.

Saffy’s Top Tip:

1.  Add and change up the vegetables.  This is a great way to use up the leftover vegetables in your fridge.
