Ploughman’s Salad

The Ploughman’s meal is a good old English traditional snack or lunch which can be eaten as a sandwich filling or salad.  The ingredients may vary but you will commonly find cheddar or Stilton cheese, apple, relishes or chutneys, grapes and sometimes ham.  I had to make my own version of a Ploughman’s salad.  It was the perfect choice for something healthy, light and fresh.  This is the filling or salad of the British working class, but in my opinion the sweet combination of cheese, apple and grapes are fit for a queen.

This recipe was adapted from ‘Morrison’s Magazine’ (July/ August 2012).

(Serves 2)

Ingredients:

Fresh kale (washed), 2 apples (I chose Royal Gala red), red and green grapes (halved), 1 1/2 sticks of celery (chopped into small pieces), a few thin slices of cheddar cheese, ground black pepper.

Method:

1. Arrange the fruit and vegetables as you wish onto the plate.
2. Arrange the cheese slices on top.
3. Season with ground black pepper.
4. Serve immediately.
