Jubilee Jam Tarts

This is a big year for Britain because of the Queen’s Diamond Jubilee and the London Olympics.  I thought I would make some jam tarts for friends to celebrate a glorious British summer.  What better way to celebrate the summer than eating fresh British strawberries and watching athletics!  I used orange zest with my strawberry filling, the tarts tasted beautiful.  I also added a little heart decoration to make them as cute as possible.

This recipe was adapted from ‘Sainsbury’s Live Well For Less’ recipes.

Ingredients:

350g ready rolled shortcrust pastry, a little butter for baking pastry cases, a little flour to stop tarts from sticking, 175g strawberry jam, 100g fresh British strawberries (finely chopped), grated zest of 1 orange, 1 medium egg (lightly beaten for eggwash), creme fraiche or cream to serve.

Method:

1. Lightly grease a 12 muffin case tart with the butter and lightly flour.
2. Cut out pastry circles. ( I use a wine glass for perfect circles).
3. Place the bases in the muffin holes.
4. In a bowl mix the jam, zest and strawberries.
5. Pre heat the oven to 180 degrees C.
6. Put the mixture into the cases but do not over fill.
7. Cut out heart shapes or any shape  which takes your fancy to decorate the top.
8. Brush the tops with the eggwash.
9. Bake for 15 minutes in the oven.
10. Cool slightly before serving.
11. Serve with cream or fraiche.
