Spinach & Yoghurt Dip

July 1, 2012

Unique Dip

I wanted to make a healthy dip to accompany my Moroccan inspired starter. My spinach and yoghurt dip is cool and refreshing.  It has a slight zing to it from the garlic.  This dip can be made in advance before any party, it may not stop you from getting a scoop of Hellman’s mayonnaise, but it’s always good to try something new.

This recipe was adapted from The Best of Sainsbury’s Vegetarian Cooking (Reed Consumer Books Limited, 1993).

Ingredients:

8 blocks of frozen spinach, 4tbsps plain natural yoghurt, 2 cloves garlic (crushed), salt and pepper.

Method:

1. Cook the frozen spinach.
2. Drain and cool.
3. Mix the spinach in a bowl with the yoghurt and garlic.
4. Season to taste.
